Winemaking
It begins with destemming and crushing, followed by a soft pressing with the presence of inert gas and static settling at low temperature.
After inoculation with selected yeasts, the must ferments at a temperature of 15°C – 16°C.
The wine undergoes a refermentation using the Charmat or Martinotti method for about 18 days, after which it is bottled using the isobaric method.
The southern wind
Australis comes from Latin, meaning southern, meridional, midday wind, wind from the south.
It represents the Ostro, a cardinal wind. Contrada Valso is totally exposed to this wind, which, being a warm wind, is represented by the orange color of the label to recall its warmth.
